This is an avocado split and grilled and then stuffed with local farm fresh spring ratatouille consisting of golden beets, cauliflower, asparagus, spring corn, red peppers, red onions, celery, tomatoes, and yellow squash.  It is then topped with a pair of fried eggs and served up steaming! Enjoy!
